The Puerta Verde plantation is located in one of the most traditional coffee regions of Guatemala, Antigua, and is owned by the Zelaya family. The volcanoes 'Agua and Fuego' create a microclimate in this area with extremely fertile soil and an average temperature of 25°C. The Zelaya family has its own wet mill and dry mill, allowing them to ensure quality throughout the entire process. This blend of Bourbon and Bourboncito varieties is processed using the washed method. In this method, which is widely used in Guatemala, the coffee is first hand-picked. Only by hand-picking can the ripe coffee cherries be harvested with utmost precision. An ingenious control system, developed by the family, ensures that only the ripe cherries reach the wet mill. Here, the coffee cherries go through a pulper to remove the skin and pulp. The coffee then undergoes dry fermentation in a basin. The Zelaya family has mastered this extremely delicate process to perfection. After fermentation, the coffee is washed and dried on raised beds in a unique greenhouse. This allows the producer to have extreme control over the drying process.
